SIMPLE . BASIC . DELICIOUS

The all-American experience is a picnic…and we have to admit, we have a love affair with picnics because it automatically turns a meal into an adventure. Early risers can catch sun up with a breakfast picnic. Spend the day outdoors with an afternoon lunch picnic or your last walk in the evening is the perfect time for a sunset picnic. No matter where you are or where you go you can make your day unforgettable with a picnic at a beach, park, or on the boat.

For a portable summer desert try this easy recipe…CHERRY HAND PIES. It's a special finish without much fuss.

We did our own take on THIS recipe and used ready made pie dough....but if you have time we suggest you make the dough too.

Cherry Hand Pies
3 cups pitted cherries, roughly chopped
1/3 cup granulated sugar
1/4 teaspoon ground cinnamon
Pinch of salt
1 tablespoon corn starch
1 tablespoon fresh lemon juice

1. To make the filling: Combine the cherries, granulated sugar, cinnamon and salt in a medium saucepan over medium heat. Cook, stirring, until the cherries are juicy and the sugar dissolves, about 5 minutes. Bring to a simmer and cook, stirring, 5 more minutes. Spoon about 2 tablespoons of the juice into a small bowl; stir in the cornstarch until dissolved. Pour the cornstarch mixture into the saucepan and continue to simmer, stirring, until very thick, 6 to 8 more minutes. Transfer to a bowl, stir in the lemon juice and let cool.

2. Dough: Form prepared dough into a ball, place on a floured work surface, and roll into a circle about 8 inches in diameter.  Use your favorite cookie cutters to cut out the shapes or cut the dough into 4 rectangles.  Add a scoop of pie filling into the center and place another dough cut out on top.  Crimp the edge of the pies tightly closed with a fork or your forefinger.  

3. Whisk egg with milk in a small bowl until thoroughly combined. Brush top of each hand pie with egg mixture and sprinkle with about 1/4 teaspoon white sugar. Cut small vent holes in the top of each pie.

4. Preheat the oven to 400 degrees and bake for about 10 minutes or until the tops of the pies are starting to brown.

5. Let cool and enjoy!
